    And Camarones de Papagayo
Shrimp lathered with a lobster paste, wrapped in bacon. Rich as fuck!

The best is in Puerto Nuevo (Lobster Village), south of Rosarito Beach Mexico at a place called Ortega's
If you get there, it's almost at the end of the main entrance street, on the right - fancier than most - I say this because 75% of the places there are called Ortega's.

Shooter used to be a bacon expert.
He ate bacon at least 5 times a week.
    Shooter loved bacon.

Then he met a heart surgeon who did cardiac bypass surgery on Shooter.
She explained that in 28 years of being a heart surgeon, she had never seen a heart with such bad veins and arteries that was still functional. She showed Shooter pictures of his main arteries, and just looking at them, they looked like (completely clogged) concrete pipe. The surgeon confirmed that Shooters arteries were like trying to tie into a concrete pipe, and in fact, they had resorted to using super glue to attach one of the graphs (really, super glue, who knew they used super glue in surgery?)

Now, to be fair, there were other factors at play.
A family history that makes our family the poster family for heart disease.
    Smoking for 50 years
    Fat. Like, really fat.
    Lazy. Like, almost sedentary.

But the thing that did it for Shooter was that in one of the photos of his cardiac arteries the artery looked a lot like a strip of bacon. Really. a big fat strip of thick sliced, cooked bacon.

    so, folks, eat that bacon.
    Enjoy while you can.
Oh, and PM me for the name of my cardiac surgeon.

Sorry for ruining your love fest.

I’m sorry you needed heart surgery. But I don’t think bacon is at fault here. I think it’s the fact you had it at least 5 times a week. Everything in moderation. Eating normal portions of red meat and bacon isn’t bad if you balance it with healthy foods and exercise.

I want to say chelation therapy might be the applicable alternative therapy. The down side is that you really have to load up on minerals to compensate. Looks like we will both have to check.

I'm inclined to believe your smoking was the biggest culprit ! Your body likely could have handled the bacon if not for the smoking. I know drinking will likely be my cause of death, but maybe not, its appeal is starting to wane, and its effect on not getting shit done increases with age.

Oh, no doubt bacon 5 times a week and smoking played a major role in shooters condition.

But he avoided bacon (and all meat) for a couple months. And recently he decided he'd have some bacon.
      Bad mistake.
Didn't taste as good as he remembered and didn't set well either.

So, all he's got left is smoking, gotta try a smoke. Hasn't had one since the morning he had surgery.

    Ok, maybe not strictly bacon...

    Hawaiian jalapeno poppers

jalapeno split long way down the pepper, and seeded
    Cream cheese
    Canned pineapple chunks with liquid
    Bacon

For each half jalapeno, you'll need approximately 1 tbspn of creamcheese.

Blend cream cheese with pineapple juice, about 1tspn per half pepper.
Stuff each half with cream cheese, then a couple of chunks of he pineapple.
Wrap each popper with a single strip of raw bacon.

Bake at 375 for 15-20 minutes!

The spicy? Or just jalapenos? Do you like Pablano peppers? I do love peppers of all types.

The cream cheese kills the heat! Thus the blue cheese with buffalo wings, and bottles of milk at protests. Dairy kills the heat.

It doesn't already kill the heat, But it will maker it milder. Then again, my father hated black pepper because he said it was to spicy for him. Give me heat!

Crab stuffed shrimp wrapped in bacon is good. The only problem is the bacon is never crispy..

Actually, try par-baking the bacon first, but before it becomes crispy, pull it out then wrap whatever you got, and bake for whatever time the wrapped food needs.

Only sharing what I've learned. But it really has only been in the last 6 month's that I've been able to afford bacon. It's usually expensive, but now I can get a pound for $4! Of course, the catch is that it's usually the ends of the side of pork belly, so it isn't always pretty, but of hit don't mind dicing it up before cooking it! Because it produces its own fat for cooking, you can start with it, then add the other things. I love it with cabbage!

Just to give you an actuate view of my experience and consumption of bacon has only been in the last six months. I learned how to make it crispy at my last job (made it every morning for the school breakfast), but now I usually make it in my cast iron skillet. I do like experimenting occasionally... Skinned baked chicken with bacon in place of the skin. I then painted it with a maple glaze!

I'd better stop... I'm getting hungry...

Wire rack over sheet pan in oven. 250°
Grease in sheet pan not on bacon.
Keep an eye on it for crispness.

I do like bacon rarely because there is no way at all that it would fit easily into my love of Halal meats, I do prefer my foods be clean and not riddled with chemicals.
